My favorite brownies

I am intolerant to dairy so I usually substitute some of these ingredients to make them diary free but Ill write the substitutes next to the ingredients.
150g butter ( I usually use olivo spread)
1 bag of dark choc cooking chips ( the Pams dark chocolate is diary free)
3 eggs
1 1/2 cups of castor sugar
1 cup of flour
1/4 cup of cocoa powder
1 tsp of vanilla essence
Icing sugar to dust
preheat oven to 180
Boil water in a pot and in a glass bowl put in half the bag of choc chips and butter. Put glass bowl over the pot and stir until it melts. Wait til it cools down slightly. Add eggs (beaten) , castor sugar and vanilla essence and mix into melted chocolate/butter. Once mixed in, sift flour and cocoa powder into the mixture. Add the the other half a bag of choc chips or how ever many you want, I just like to have a lot of choc chips. Place in greased (or use baking paper) square baking tray. Place in oven and bake for 40mins, it can sometimes be less so keep an eye on it.
then pull out when done, wait for it to cool down. Dust with icing sugar and cut up.
